Cilantro Chili Lime Drumsticks

Not too long ago i discovered boneless, skinless chicken thighs as my new favorite way to eat chicken. Now I have discovered chicken drumsticks. Oh my they are so good! They are so full of flavor and very versatile, plus the kids LOVE them!

Ingredients:
Salt and pepper
4 Tbsp. melted butter
1/4 cup lime juice
1 Tbsp. chili powder
1/2 tsp. minced garlic
1/2 tsp. chopped cilantro
1 tsp. sugar
6-8 drumsticks

Salt and pepper your drumsticks. Take remaining ingredients and mix together in a bowl. Wait about 2 minutes until your melted butter starts to thicken and the mixture becomes a paste. Use a basting brush and spread the mixture over both sides of the drumsticks. Fire up the grill and cook the drumsticks over medium high heat. Turn about every 7 minutes. Use a meat thermometer and cook these puppies to 190 degrees. It's higher than the 165 we usually say for chicken, but that's to get the skin on the drumsticks good and crispy. Trust me, the inside meat will still be perfectly tender and juicy. The skin is pretty much water tight and keeps all the moisture in.

I served with corn on the cob that I grilled on the grill as well. I prefer it grilled instead of boiled. And it's very easy, just remove shucks and all silk, lightly spray with olive oil and grill for about 7-8 minutes, just until a few of the kernels on each side turn a darker color.
