Honey Nut Crescent Rolls

For several years I have been tearing recipes out of magazines thinking that I will make them someday.  I found this in my recipe folder and it is dated 2005.  Yes, you read that right 2005!  I am proud of myself for making a recipe that I held onto for 9 years!!!!  That is older than my kids!  Anyways... I made these for Easter dinner and they were yummy.  I am not going to lie, they were a little on the sweet side and I don't think that I could eat these very often, but they were a great treat.  I actually cut the amount of filling in half from the original recipe (from Food and Family Winter 2005) because I thought they would be too rich and I was right!

Ingredients:
  • 2 Packages Refrigerated Crescent Roll Dough
  • 4 oz of Cream Cheese- softened
  • 3 Tablespoons of Honey-divided
  • 1/4 cup Sliced Almonds
  • Ground Cinnamon
Makes 16 Rolls

Preheat oven to 375.  Using a mixer, combine cream cheese and 2 tablespoons of honey.  Then stir in sliced almonds.
Unroll crescent dough into the already perforated triangles.  Place 1/2 tablespoon of cream cheese/honey mixture near the long end of the dough.  Then roll it to the opposite point.  Place on ungreased baking sheet or baking sheet lined with parchment paper, sprinkle with cinnamon, and bake for 12-14 minutes.  Drizzle with remaining honey and serve warm.

Crock Pot Apple Sauce

Fall is the perfect time to pick apples.  I like to bake a variety of things with the apples we pick, but I LOVE to make applesauce.  My grandma often made homemade applesauce and I always looked forward to eating it.  This recipe is so simple and the perfect addition to any meal.  I love the balance of sweet and tart apples so feel free to mix up the variety of apples you use.  And remember applesauce is just as good warm as it is cold.  I make a double batch of this and freeze a little more than half to use throughout the winter.

Ingredients:
  • About 6 lbs or 12 Apples (I used Gala Apples)
  • 3/4 teaspoon Cinnamon
  • 3/4 Cup Apple Juice
  • 3 Tablespoons Brown Sugar (you can start with less and add more after you taste it)
Peel and slice apples.  Place them in the crock pot with cinnamon, apple juice and brown sugar.  Cook on low for about 8 hours.  Stir to mush into applesauce.  I like my apple sauce a little chunky, but you could also you a potato masher to eliminate more of the chunks.

Kickin' Baked Chicken

If you want more magical mom stuff, please like us on Facebook here!

I feel like I could name almost every dish that I make "Sweet and Spicy" something or other so I had a tough time coming up with a name for this.  I thought I would wait until after dinner to decide and as I was eating the chicken it was clear that it was different from sweet and spicy... it was KICKIN'!  I served it with Super Shells and Cheese and Zucchini Fritters.

Ingredients:
  • 4 Chicken Breasts
  • 1 teaspoon Smoked Paprika
  • 3 Tablespoons Brown Sugar
  • 3/4 teaspoon Salt
  • 1/4 teaspoon Dried Oregano
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Garlic Powder
  • 1/2 teaspoon Cumin
In a bowl, combine all ingredients except chicken and mix well.  Pound chicken breasts to flatten them a little bit.  Dip each piece of chicken in the spice mixture until coated.  Place in baking dish.

I usually do this about 30 minutes before I want to cook and place them in the fridge to let the flavors soak in a bit.  Then I preheat oven to 425 degrees and bake the chicken for about 20-25 minutes

Sweet and Spicy Bacon Wrapped Chicken

This is something that can be thrown together very quickly with ingredients that you probably have on hand. The blend of the sweet and spicy gives perfect flavor. This recipe is extremely easy to adjust based on the number of people that you need to serve. I can make a small amount for just our immediate family or for a large group. Either way, everyone LOVES it!

Ingredients:
  • Garlic Powder
  • Chili Powder
  • Salt and Pepper to taste
  • Chicken Breasts
  • Bacon
  • Brown Sugar
First, cut the chicken breasts in half lengthwise. Then sprinkle each side with chili powder, garlic powder, salt and pepper.
After that, spiral wrap each piece of chicken with a piece of bacon and roll in brown sugar. Place chicken in baking dish and bake uncovered at 400 degrees for 30 minutes.
Serve with your fave side dish. I am sure that there won't be ANY left over!
