Takeout Style Chicken Saag

Ingredients:

  • 1 Tbsp. oil
  • 1 diced onion
  • 3 cloves garlic
  • 2 Tbsp. cumin
  • 1 Tbsp. coriander
  • 1/2 tsp. turmeric
  • 1/2 tsp. salt (or more to desired taste)
  • 1/4 tsp. cinnamon, red pepper flakes and cayenne pepper
  • Juice of 1/2 lemon
  • 1 16 oz. can crushed tomatoes
  • Bag baby spinach
  • 6 boneless skinless chicken thighs
  • Can coconut milk
  • Cooked basmati rice


In pan, sauté onions and garlic in oil. Add spices and lemon. Add tomatoes and spinach and cook just until wilted. Place this mixture in food processor and purée.

Chop up your chicken and place in slow cooker. Add spinach mixture and coconut milk. Cook on low for 5 hours.

Serve with basmati rice (cook according to package directions).

FREE Lego Blocks Happy Birthday Banner


I am planning Cooper's 3rd birthday party and we are going with a Lego theme. It is actually quite a small party with family and a few friends, but I'm always looking for an excuse to do cute projects, and of course giveaway free stuff to our readers!

To do the lego banner yourself, just click on the link below which will take you to the PDF file. Print the file (it will use a lot of colored ink, I suggest maybe printing the file at a Kinko's) then cut out each block. Clip the block letters to string using clothespins or binder clips and hang in your desired spot.

Pepperoni and Cheese Monkey Bread

The original recipe for this was one of the VERY first things that I pinned and actually accomplished from Pinterest.  I am not sure where the original recipe came from, so I am sorry to the original pinner.  I make it totally from memory now so it was hard to actually measure for this one.  Oh wait...I didn't keep track of the actual amount of pepperoni or cheese that I used, so I guess I didn't as good of a job as I thought that I had.  Sorry!

Ingredients:
  • 1 (28 oz) Package of Frozen Pizza Dough (thawed)
  • About 3 Tablespoons of Butter
  • Minced Garlic
  • Pepperoni Slices (less than a package)
  • Mozzerella- cut into cubes
  • Pizza Sauce for dipping
Melt butter and stir in garlic.Break off a piece of the dough (a little smaller than a golf ball), flatten it out just a bit, and place a piece of pepperoni and mozzerella inside.  Fold the dough around it forming into a ball.  
Roll ball in garlic butter and place in ungreased bundt pan.  Repeating until all dough is used.
Bake at 350 for 30-35 minutes.  Turn pan over onto plate and serve with warm marinara sauce for dipping.


Buffalo Thigh Surprise

Here's a delicious, healthier alternative to buffalo wings. Even if wings are cooked in the oven, they have the skin on them which is high in fat. If you do boneless breast meat, you add a lot of carbs with the breading. Boneless, skinless chicken thighs give you a great alternative without the skin, no breading, but still a tender and juicy dark meat that makes chicken wings taste so damn good!

Ingredients:
- 1 package of 6-8 boneless skinless chicken thighs
- 1/3 cup red hot
- 1 Tbsp. white vinegar
- 1/2 tsp. cayenne pepper (adjust more or less for your spice preference)
Dash pepper
Cooking spray

Preheat oven to 400 degrees. Brown the chicken thighs on the stovetop for about 5 -7 minutes. Transfer to a baking dish with cooking spray. Mix remaining ingredients in a bowl and pour over chicken. Cook in oven at 350 for 25 minutes.

Serve with homemade Low Fat Ranch Dressing. I make mine by using the Hidden Valley packets for dip but sub nonfat greek yogurt instead of sour cream. Tonight I served with Simple Herb Roasted Potatoes.

Simple Herb Roasted Potatoes

Whenever I buy fresh herbs for a specific recipe, I spend the rest of the week trying to come up with additional uses for the herbs before they go bad. So tonight it was Simple Herb Roasted Potatoes with fresh rosemary and thyme, one of my favorite herb combinations.

Ingredients:
-4 red potatoes
- 1 Tbsp. sea salt
- 1 tsp. fresh rosemary, finely chopped
- 1 tsp. fresh thyme, finely chopped
- 1 tsp. grated Parmesan
- olive oil

Preheat oven to 425 degrees. Cut the potatoes into bite size pieces. Throw in a microwave safe dish and cook in microwave about 5 minutes. Meanwhile, mix remaining ingredients, except oil, in a small bowl. Lay the potatoes on a baking sheet and drizzle olive oil over them. Pour the herb salt mixture and toss potatoes around to coat. Cook in oven at 425 degrees for about 20 minutes or until crisp.
