Honey Garlic Shrimp

I am a huge fan of cooking shrimp because they cook in very little time and always taste delicious!  I used to think that shrimp had to be cooked in butter and garlic (so good, I know) but now I experiment with lots of different marinades and spices.  

Ingredients:
  • 1 lb of Shrimp (peeled and deveined)
  • 2 Tablespoons of Honey
  • 3 Tablespoons of Lime Juice
  • 1/4 Cup of Olive Oil
  • 1 teaspoon Minced Garlic
  • 1/2 teaspoon Salt 
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Crushed Red Pepper Flakes
Combine all ingredients except shrimp in a small bowl.  Mix well. Place shrimp in Ziploc Bag and pour marinade over it.  Make sure shrimp is covered in mixture.  Squeeze out the air, place in fridge for 30-60 minutes.  
Remove shrimp from fridge and place on metal skewers.  Pour marinade over top.
Place shrimp on preheated grill.  Cook them for about 2 minutes on each side or until they turn pink.

These shrimp can also be cooked inside in a skillet.  Just heat a large skillet and cook the shrimp about two minutes on each side.  There isn't a need for additional oil the marinade should be enough.

Sweet Sriracha Beef Lettuce Boats

I used to look at the bottle of Siracha and think "what would I ever use that for?"  Now after following a few recipes that included it, I can see how some people (who like it hot) could put it on everything!  I love the sweet and spicy combination on the beef and that the lettuce cools it all down.  In my opinion this is the PERFECT summer meal!



Ingredients:

  • 3 Tablespoons Sriracha Hot Chili Sauce
  • 3 Tablespoons Honey
  • 1/4 teaspoon Cumin
  • 2 Tablespoons Canola Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Cinnamon
  • 1 Tablespoon Soy Sauce (I used reduced sodium)
  • Cucumber
  • 2-3 Tablespoons of Greek Yogurt
  • 3 Tablespoons of Cilantro
  • Dash of lime juice
  • salt and pepper
  • Romaine Lettuce
  • 1 lb of Sirloin cut into cubes
Serves about 5

In a small bowl, combine Sriracha, honey, cumin, canola oil, salt, cinnamon, and soy sauce.  Mix them well.  Pour over beef and let marinate for 30-60 minutes.


Peel cucumber, seed, and dice.  Place cucumber in bowl and mix with Greek yogurt (adjust amount for size of cucumber and desired creaminess).  Stir in chopped cilantro and dash of lime juice.  Salt and pepper to taste.  Refrigerate until ready to use.  

Place grill pan on grill and add meat.  Cook until desired temperature is reached.  I usually cook these to medium well because it makes the most people in my house happy.  And well... a happy family = a happy mom!


Place beef on lettuce leaf and top with cucumber salsa.  And eat it like a taco!

Steak Oscar with Asparagus

I am sure that my father-in-law thinks that I named this dish after him and it would actually be quite fitting.  For those of you who know him, you will understand.  (Please don't tell him I said that)  I have no idea how this combination earned this name but I see no point in trying to change it.  This is a great meal to celebrate a special occasion.  This can be made at home for less than half the cost as at a restaurant and I promise it will taste just as delicious!



Ingredients:
  • 1 lb of Fresh Asparagus (steamed)
  • 1/4 lb of Fresh Crab Meat
  • 2 Tablespoons of butter
  • 1 Tablespoon of Lemon Juice
  • 4 Beef Tenderloin Steaks
  • 1/8 teaspoon Paprika 
Hollandaise Sauce
  • 6 Tablespoons of unsalted butter (melted)
  • 2 Large Egg Yolks at room temperature
  • 1 1/2 Tablespoons of Fresh Lemon Juice
  • Salt
  • Pepper
  • A pinch of Cayenne Pepper
Serves 4

I lightly seasoned the tenderloins with steak seasoning and grilled them to medium.  
After I brought the steaks in from the grill I covered them loosely with foil and let them rest for just a few minutes.

Melt the butter in a skillet and add crab meat.  Cook until crab meat is heated all the way through.  Add lemon juice and toss to coat.
In the jar of a blender place egg yokes, lemon juice, salt, pepper, and cayenne.  Blend for 15 seconds.  With the blender running slowly pour the hot melted butter into the blender and blend for an additional 30 seconds.  The sauce will thicken.  You can leave sauce in blender at room temp for up to an hour.  If it gets too thick standing at up to a tablespoon of HOT water and blend for a few seconds to thin it out a tiny bit.
Top tenderloin with 1/4 of crab meat and asparagus.  Drizzle hollandaise sauce over it and ENJOY!!!!

Blueberry Cheesecake

It has been almost two weeks since we went blueberry picking and we are still eating the fruits of our labor!  I can't believe how fresh they still are.  (HAHA!  Yes I wrote this over a month ago... I am very behind!)  When I buy blueberries at the grocery store they usually only last a few days so I am quite impressed with the ones we picked fresh.  I guess that means that at the berries we buy at the grocery store take a long time to get there.  We picked these at Eagletree Farm in Leesburg and they never spray them with anything so they are perfect to eat right from the bush.  We have just a few fresh ones remaining, but lots in the freezer.

Ingredients:
  • 3 1/2 Tablespoons of butter
  • 1 1/4 Cups of Graham Cracker Crumbs
  • 1 (8 oz) package of Cream Cheese
  • 1 Egg
  • 1/2 teaspoon of Vanilla
  • 6 oz of Blueberry Preserves (I used homemade)
  • 3/4 Cup Fresh Blueberries
  • 6 Tablespoons Sugar
Serves 8

Melt butter in microwave.  Mix with graham cracker crumbs and press into bottom of pie plate.  Put in fridge until ready to use.  
Evenly spread layer of Blueberry Preserves on top of graham layer.
In a large bowl, beat cream cheese with mixer until creamy.  Next add in sugar, eggs, and vanilla.  Continue beating until ingredients are well blended.  
Evenly top jam layer with fresh blueberries
Pour cream cheese mixture over blueberries and bake at 350 for about 25-30 minutes.  Cheesecake will puff up slightly and turn a light golden color.  Cool completely before serving.  Store in fridge.

 Thank goodness that Hostess brought back Twinkies so that I could make these cute cupcakes for my oldest son's birthday!  I was definitely not heart broken when they briefly stopped making them, because I am pretty sure that it had been at LEAST 10 years since I had had one.  I did not come up with this idea, I saw it on Pinterest (of course).  They were very easy to make and the kiddos LOVED them.

Supplies:
  • Cupcakes
  • Blue Icing
  • Black Icing
  • Jimmies
  • Candy Eyes (or you can use white Smarties and just put a dot of black icing on them)
  • Twinkies (cut in half)
  • 2 Ziploc Bags (to pipe icing)
