A while ago Tracy posted a recipe for some Jalapeno and Bacon Cheesy Bread and it was the most ooey gooey delicious bread I have ever tasted! Since then I have wanted to make something similar, and actually came across a recipe for Bacon Parmesan Muffins that looked good. I changed it up a bit and used shredded cheddar jack instead of parmesan, and oh my were these delicious! If you want to see the original recipe for the bacon parmesan muffins, click here.

Perfect Potato Skins

Ingredients:
- 4 Idaho potatoes
- Butter
- Shredded cheddar
- Bacon, cooked and chopped
- Green onions, sliced small
- Sour cream
I cook my potatoes in the microwave for about 8 minutes, just until slightly soft when pressed with your thumb, but not soft like a baked potato. Let them cool completely. Once cool, cut in half lengthwise and scoop the bulk of the inside of the potato out. Save this for a future potato dish later in the week. Cut the halves in half again and brush the entire potato with melted butter then top with cheese and bacon. Stick in your oven and cook 10-15 minutes or until your cheese is nice and bubbly. Top with green onions and serve with sour cream.
Tonight I served these with Sweet and Spicy Chicken Sliders.

Salted Caramel Mashed Potatoes
Yes, you read that correctly. I can truly say this is a one of a kind recipe! I even googled it and it only came up with caramelized onion mashed potatoes. This one does have caramelized onions, but it also has real caramel!
Ingredients:
- 1/4 stick real butter
- 1/4 cup diced onions
- 2 Tbsp. brown sugar
- 1/2 tsp. chopped fresh rosemary
- 5-6 red potatoes, peeled
- 1 tsp. salt
- 2-3 Tbsp. milk
Cut and boil potatoes in pot. In another skillet, melt butter and add onions. Cook onions on medium for about 10-15 minutes. Add brown sugar and continue to cook another 10, stirring frequently until thick caramel mixture remains. Drain potatoes and add caramel mixture and the rest of the ingredients. Mash with a masher or whip with a hand mixer.
