Bailey's Irish Brownie Trifle

Last year Scott and Tracy went over to some friends' house for dinner on St. Patty's Day and  needed to bring a dessert.  There was no time to go to the store.  This dessert can be quickly whipped up with things found in most pantries.  Since it was so good, of course she will be making it again this year.  You can leave out the Bailey's and make it kid friendly too!

Ingredients:
  • Box of Brownie Mix (and whatever it requires)
  • 1/2 Cup Cool Whip Plus more to top
  • About 3 tablespoons of Toffee Bits
  • 2 1/2 Cups of Milk
  • 5.9 oz Box of Instant Chocolate Pudding
  • 2 tablespoons Bailey's Irish Cream Liquor
**Makes about 5 Servings

Bake the Brownies as directed on the box and let them cool completely.  Place a layer of brownies in the bottom of a trifle dish then sprinkle layer of toffee bits.
In bowl combine 2 1/2 cups of milk and box of instant pudding mix and whisk together.  Fold in coolwhip and Bailey's.  Next, pour pudding mixture on top of the layer of brownie and toffee.  Top with a little more coolwhip, a small piece of brownie and a little more toffee.  Refrigerate for about 30 minutes.

This can also be made with out the Bailey's and it is delicious too.

Leprechaun Punch

I saw this idea on a website a while back and it's so easy, why not give it a try? My kids loved it and it's very easy. You just take green (lime) sherbert and place a dip or two in a cup (clear plastic cups work best because you can see the color through it). Then top with Sprite or any lemon-lime soda. For an extra touch of green, use a green straw. These make great kids companions when adults are drinking green beer!

St. Patty's Day Irish Chips



Super easy and fun St. Patrick's Day Appetizer to make and take to a party, or just to eat at home! These are so easy I don't really even need to write out the directions and ingredients, but here they are anyway.

Ingredients:
Waffle Fries
Shredded Cheese
Chopped Corn Beef
Avocado
Sour  Cream
1-2 tsp. ranch packet
Chives

Directions:
Cook waffle fries according to package directions. Set oven to broil and cover fries in cheese and chopped beef. Broil until cheese is lightly browned. Using a hand mixer or immersion mixer, blend avocados, ranch and sour cream together until desired color and consistency.

Top potatoes with "green cream" and chives. Enjoy!

St. Patty's Day Printable Candy tags




Just in time for St. Patrick's Day! Here's a great way to do something fun for your kids for the Irish holiday. I made a cute tag that says "You are better than any treasure found at the end of the rainbow" and attached it to a pack of Starbust for each one of them. I made a couple more sayings as well, depending on what kind of treat you'd like to use. Magical Mom Tracy had gold coins, so I made one that says "Here's a piece of Treasure from the Rainbow" I also like the idea of a small snack baggie full of Lucky Charms so I made one that says "You're my Lucky Charm!"
