Low Carb Italian Chopped Salad

I love Italian sub sandwiches, but I dont really love all the fat and carbs, but you can turn almost any sandwich into a delicious salad? Here's my take on an Italian chopped salad.

For the Dressing:
  • 1/4 cup olive oil
  • 1/4 cup chicken broth
  • 1/4 cup red wine vinegar
  • 1 tsp. minced garlic
  • 2 tsp. Dijon mustard
  • Lots of pepper
  • Salt
Put all ingredients in food processor and blend. Chill for 30 minutes.

For the salad:
  • Romaine or iceberg lettuce
  • Turkey pepperoni, fat free ham and hard salami
  • Tomatoes
  • Cucumbers
  • Red onions
  • 2 slices mozzarella cheese
Chop up lettuce into small bite size pieces. Chop desired amount of other ingredients and toss all of it lightly in the dressing. Serve immediately!

Meatball Subs

I try to always keep homemade meatballs in the freezer.  They are quick and easy to make spaghetti and meatballs or to feed to the kids if we are having something they don't like, but tonight I am using them to make Meatball subs.

Ingredients:
  • Meatballs- Here is the recipe for our Baked Meatballs.  
  • Marinara Sauce
  • Provolone
  • Butter
  • Garlic Salt
  • Sub Buns
  • Shredded Mozzarella
  Pre-heat oven to 400.  Heat the sauce and meatballs in sauce pan until hot.  Then spread a thin layer of butter onto each of the sub buns and sprinkle with garlic salt.  Lightly toast the insides of the buns by placing them buttered side down on a griddle on the stove.
Next, place a layer of provolone cheese on the bun.
Place meatballs on bun and add a little shredded mozzarella.Bake just a couple of minutes or until cheese is melted.  I am serving this tonight with Caesar Salad.
