Spicy Chipotle Shrimp

The marinade for this shrimp has just the right amount of spice and heat to make it different from any of our other shrimp recipes.  One trick I have learned is that Chipotles in Adobo Sauce can be frozen so if you buy a can and only use a few place the remaining peppers and sauce in a freezer bag and place them in the freezer.  

Ingredients:
  • 1 lb Shrimp (cleaned and deveined)
  • 1 Clove of Garlic (minced)
  • 2 Tablespoons Lime Juice
  • 3 Tablespoons of Honey
  • 2 Chipotles in Adobo Sauce
  • 1/4 Cup Olive Oil
Combine all ingredients except shrimp in small food processor.  Process until smooth
Place shrimp in ziploc bag and pour marinade over.  Place in fridge for about 30 minutes
Skewer shrimp
Grill 2-3 minutes on each side or until shrimp are pink in color.
ENJOY!!

Honey Grilled Pineapple

We have had a couple of nice days here lately so we have been taking advantage of being able to use the grill.  I will admit, I was hesitant to try this out but it is DELICIOUS!

Ingredients:
  • Pineapple
  • Dash of Tobasco Sauce
  • 3 tablespoons Butter
  • 1 teaspoon Honey

Cut pineapple into large spear pieces.  Melt butter in the microwave. Pour melted butter, honey, and Tobasco Sauce into ziploc bag.  Place pineapple in bag and marinate pineapple for about 20 minutes.

Place each pineapple spear on a metal skewer and grill about 2 minutes on each side.

Honey I ate the Pork

Pork tenderloin is my all time favorite meat to cook. You can do just about anything with it. This recipe is simple and includes some other of my favorites- honey and butter! I like to serve with rice pilaf (see previous post with recipe for Better than Rice-a-Roni Rice Pilaf) and a salad.

Ingredients:

  • - 1 lb. pork tenderloin
  • -Cajun seasoning
  • - 1/2 stick butter
  • -2 tbsp. Honey


Directions:

1. Rub pork with Cajun seasoning at least 30 min before cooking.
2. Preheat oven to 375 degrees.
2. Melt butter in large, ovenproof pan. Add honey and heat over medium heat.
3. Brown pork in the honey/butter mixture for 5 minutes on each side.
4. Put ovenproof pan with the pork in the oven and cook for 20-30 minutes until pork is done.

It is so tender and juicy and just delicious. Yum!
