Mini Strawberry Cheesecake Cream Pies

This dessert is part cheesecake and part mouse, but all delicious!  Our strawberry picking at Wegmeyer Farms in Hamilton, Virginia was a great success and I have been making all kinds of yummy treats for my family.  I am sad that the season is coming to an end.  Fresh picked strawberries have become a new family favorite!

Ingredients:
  • About a Cup of Strawberries (enough to make 1/2 cup puree) plus a couple to cut up for garnish
  • 8 oz Block of Cream Cheese (I used 1/3 les fat, just don't use fat free)
  • 1/2 Cup Heavy Whipping Cream
  • 1/3 Cup plus 2 Tablespoons Powdered Sugar
  • 1 teaspoon Vanilla
  • 6 Mini Graham Cracker Pie Crusts (or one large one)
Place about a cup of strawberries into a small food processor and pulse until no large chunks remain, but don't make it completely pureed.  Pour into measuring cup to make sure you have a 1/2 cup.  Set aside.
In medium size bowl, combine cream cheese, vanilla, and 1/3 cup powdered sugar.
Add Strawberry puree to cream cheese mixture and mix on low until thoroughly combined.  Set aside.
In large bowl, (not because you are making a lot, but because you don't watch it to splatter everywhere) combine 1/2 heavy whipping cream and 2 tablespoons of powdered sugar.  Mix with electric mixer until it becomes stiff like whip cream.
Fold in whip cream with the strawberry cream cheese mixture with rubber spatuala.  Then evenly distribute pie filling into mini graham cracker crusts or one large crust.  Chill for at least 30 minutes and serve.

My Kids have the BERRY Best Teachers!!!

After our BERRY successful trip to Wegmeyer Farms last week, we decided to go berry picking again.  Between the two visits we picked almost 20 pounds of strawberries.  I have made lots yummy recipes with them, including Strawberry Lemon Bundt Cake, Strawberry Nutella Bruschetta, and Strawberry Spinach Salad with Raspberry Vinaigrette.  I even gave some to the boys' teachers.  I picked up a couple of cute colanders from the dollar section at Target.  They had a variety of shapes and colors including green apples, pink flowers and yellow flowers.  I created a cute tag to go with it (link at the bottom), punched a hole it in, tied it on with a piece of twine, and hand delivered it to their amazing teachers.  They LOVED it!
To print, right click on the picture below and save to your computer.  Print on 8.5x11 white card stock.  Six will print on the sheet so there will be enough for all of your kids' teachers.

Chocolate Covered Strawberry Milkshake

I love to surprise the kids with a treat after school.  Since I knew Evan would come home from school hot and exhausted because today was his field day and it was 90 degrees outside I thought he deserved a milkshake.  We picked berries a few days ago at Wegmeyer Farms and stuck some in the freezer for occasions just like this.  The frozen strawberries make the milkshake nice and cold.  

Ingredients:
  • Strawberries 
  • Cocoa Powder
  • Hershey's Syrup
  • Vanilla Ice Cream
  • Whipped Cream
I used my Nutribullet, I know that making milkshakes is not its intended purpose but it is easy to use and easy to clean, not to mention just the right size to make a couple of milkshakes for the kiddos.  
I cut the stems off the strawberries and filled the small cup about 2/3 of the way, added 3 scoops of vanilla ice cream, a teaspoon of Hershey's Cocoa Powder and blended until smooth.  I drizzled a little Hershey's Syrup in the glass, poured in the milkshake and added a dollop of whipped cream.  I did convince them to share a little bit with me!!  I am one lucky mom!
