Ice Cream Cone Cupcakes

Yesterday, I was in need of an idea for the bake sale.  I only had a few hours to work with and I did not want to go to the grocery store.  I looked in the pantry and saw that I had a couple of boxes of cake mix and icing.  I wanted to make something a little more fun than regular cupcakes.  I decided to bake the cupcakes in Ice Cream Cones.  I only had 18 ice cream cones on hand so I made a mix of those and regular cupcakes.
Now I will also tell you that I am not perfect.  Sometimes things just don't go as I had planned and yesterday's baking was one of those times.  I wasn't quite sure how long to bake the cupcake cones.  I had made these before but couldn't remember exactly the baking time.  When I took them out of the oven to check them, the cones tipped over.  Clearly they were not done because the batter spilled out of them.  First batch=FAIL! I didn't let it discourage me (mainly because I didn't have any choice this was baking with a purpose not for fun).  I started a new batch.  This time I placed the cones in muffin tin for a little more support.  I also knew that I needed to bake them longer before checking them.  When all was said and done, they were cute!  I had a few less than I had hoped, but all in all it was fine.

Ingredients:
  • Box of Favorite Cake Mix prepared according to package
  • Favorite Icing
  • Sprinkles
  • 24 Ice Cream Cones (the flat bottom kind)
Make cake mix according to package.  Place ice cream cones in muffin tin and fill about 2/3 of the way to the top.  Do as I say not as I did in picture.  I filled mine just a little too full.   Bake at 350 for 14-16 mins.  Let them cool completely, add icing, and sprinkles.  
 I needed a way to transport them, so I cut holes in a thick piece of card stock and placed them in a tin plate.  It worked pretty well, but I am still looking for a better method.  Maybe in individual cups?  If you have any ideas let me know.  These were a HUGE hit at the bake sale and I would like to make them again.

Blueberry Muffin Tops

Nathan's playgroup is coming over today. The kids are always hoping there will be something yummy to snack on.  These Muffin Tops are the perfect muffin/cookie combination for everyone to enjoy!

Ingredients:
  • 1 cup blueberries
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup salted butter (softened)
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon almond extract
  • 2 teaspoons lemon zest
  • Crystal Sugar Sprinkles
  • 1 cup Sugar
Makes about 30 Muffin Tops
 First combine baking powder, salt, and flour in a bowl and set aside.  Next cream together butter and sugar then add in egg.  After that is mixed well add lemon zest, milk, and almond extract.

After that is mixed well slowly add in dry ingredients.  Gently stir in blueberries by hand.

Refrigerate dough for about 30 minutes.  Preheat oven to 375, then form dough into balls and sprinkle tops with Crystal Sugar Sprinkles and bake 11-13 minutes.
Now you will be able to enjoy the best part of the muffin!

Magical Moms' M&M Cookies




I can think of a lot of things that M&M could stand for.... Mickey Mouse, Magical Moms, and Making Memories with Mommy's Monsters.  My little guys both LOVE M&M's (and well so do I) so these cookies are always a hit at our house.  Nathan's favorite part is mixing in (and stealing) the M&M's.  I love to bake up a special treat with my kiddos.                                              
Ingredients: (makes 30-36 cookies)
  • 2 Cups of Flour
  • 1 Cup Granulated Sugar
  • 1 egg
  • 1 egg yolk
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1 Cup Brown Sugar
  • 2 teaspoons Vanilla Extract
  • 3/4 Cup Butter Flavored Crisco (or Butter)- at room temperature
  • 1 Cup Mini M&M's
Preheat oven to 325.  In medium bowl, sift together Flour, Salt and Baking Soda.  Then in large bowl cream together sugar, brown sugar, and Crisco using a mixer.  To that mixture add the vanilla, egg, and egg, yolk.   
Slowly add in flour mixture while keeping mixer on low.  Last, Stir in M&Ms.  
Form into balls and place 2 inches apart on cookie sheet and bake for 14-16 minutes at 325 degrees.
