Baked Potatoes on the Grill

These are quick and easy baked potatoes.  I know I said that I was going to make this meal entirely on the grill, but I decided to take a short cut and use the microwave for a few minutes.  Our evenings are so busy and I figured no one would mind if I saved a few minutes.  

Ingredients:
  • 4 Potatoes
  • Sea Salt
  • Pepper
  • Olive Oil
Wash the outsides of the potatoes.  Dry them off.  Pierce each potato multiple times with a fork.  Brush the skins with olive oil and sprinkle with sea salt and pepper.  Place potatoes on a plate and microwave for 6-8 minutes (depending on size) turning halfway through.  This step can be eliminated and they can cook all the way through on the grill, but it takes a very long time.  So to speed up the process I cooked them a little more than halfway in the microwave and finished them on the grill.
 Place on grill and cook for additional 12-14 minutes turning throughout.

We are going camping this weekend and I plan on making these potatoes for sure!

Flower Bed Tic-Tac-Toe

My boys love to play tic-tac-toe.  We often play while we are at restaurants waiting on our food.  I think that they like to play because it is something that they both know how to play and they can challenge Mommy or Daddy to a quick game.  Now I can add this to the list of things that I can send them outside to do.  And they like to do anything that involves dirt!
Supplies:
  • 9 3x3 Tumbled Natural Stone Tile
  • 10 Rocks
  • Black Acrylic Paint
Level out the desired spot in your rock garden or flower bed.  Place the 9 tiles in three rows of three.  Spread the dirt that you moved while leveling over top of the tiles and gently press the dirt in the grid.  I stepped on the tiles to push them down a little more.  Brush the dirt off the tiles.  Paint 5 rocks with X's and paint 5 rocks with O's.  Then challenge someone to a friendly game of Flower Bed Tic Tac Toe!

Skinny BBQ Chicken Pizza On the Grill

Typical pizza is loaded with calories many of which come from the buttery crust.  By using a whole wheat tortilla and a lot less cheese I can make this a delicious meal that is WAY healthier than any delivery pizza.  

Ingredients:
  • 4 Burrito Size Whole Wheat Tortilla
  • 1 Grilled Chicken Breast
  • About a 1/2 Cup Favorite BBQ Sauce (I used Best Darn BBQ Sauce Recipe)
  • Red Onion (I lightly saute the slices so they are not so crunchy)
  • Two Pieces Cooked and Crumbled Turkey Bacon
  • 1/2- 1 cup 2% Milk Cheddar Cheese
Spread an even layer of BBQ sauce onto each tortilla shell.  Sprinkle with chicken, bacon, onion, and cheese.  Place on foil lined grill for 6-8 minutes or until cheese is melted and tortilla is slightly crispy.  Cut into quarters.

I served this with Honey Grilled Pineapple.
