Taco Cups

I have said this at least a dozen times... One thing that our family can all agree on eating is Tacos!  Here is another way to change up the regular old tacos and an even better way to serve them at a party!

Ingredients:
  • 1 lb Ground Beef
  • Your FavoriteTaco Seasoning
  • Refried Beans
  • 48 Wonton Wrappers
  • Shredded Cheddar Cheese
  • Salsa
  • Sour Cream
Makes 24 Taco Cups

Cook the ground beef and add taco seasoning according to season packet.  Preheat oven to 375.  Place one Wonton wrapper in each space of a regular size muffin tin.  Smear (now that is one word I have NEVER used when writing a recipe lol) about a tablespoon of refried beans on top of each of the wrappers.  Sprinkle about a tablespoon of the taco meat in each cup, then sprinkle a little cheddar cheese on top of the meat.  Add another Wonton wrapper and gently press down.  Add a little more meat and cheese.

 Bake for about 10 minutes or until Wonton wrappers are golden brown.  Remove from oven and top with shredded lettuce, sour cream, and salsa.  I placed mine on a small bed of cilantro rice, but you could easily add the rice before the lettuce.  These little taco cupcakes are perfect party food or dinner time!

Cheesy Ham and Spinach Spirals

A few nights ago I went with a friend to a Pampered Chef training event.  I enjoyed sampling all of the goodies.  I came away with a few new things that I wanted to try.  This is one of them.  I made it and brought it as an appetizer for a cookie exchange.


Ingredients:
  • 1 tube of Crescent Roll Dough
  • 4 oz Chive and Onion Cream Cheese (at room temp)
  • 8 to 10 Slices of Deli Ham
  • Baby Spinach Leaves (a couple handfuls)
Preheat oven to 375.  Roll out dough.  If you use the sheet kind you will just flatten a little bit.  If you use the actual roll kind you will have to pinch the perforated cuts together.  Spread the softened cream cheese on the dough.  Layer with ham and then baby spinach leaves.  Roll the up dough (short side to short side) tucking the ham and spinach in as you go.  After it is rolled up pinch the edge with the roll to seal it.  Slice with shape knife and place on a baking sheet lined with parchment paper.  Bake for about 10 minutes.

Spooky Spider Ice Cubes


I was looking for something super easy that would entertain the kids for a bit.  They love to mix and cook but I am not always up for the mess.  I decided I could deal with a little spilled water because that is an easy clean up.  These ice cubes entertained Nathan and his friend for a long time.  I had the boys use tongs to place the spiders in the ice cube trays to help them work on their fine motor skills.  Then I let them fill their measuring cups with water from the refrigerator door (which was exciting for them...sometimes it's the little things that make them happy)  They had to very carefully walk it back to their seats and pour it in.  It took them a couple of tries (and towels) but t hey learned to pour slowly so it didn't over flow.  Then we place them in the freezer.  Our friend was coming over the next day too so we left the water alone over night to let it freeze.  The next day they were excited to serve their spooky drinks to Nathan's grandma.  I showed them how to break apart the ice and gave them each a large bowl to play with.  They first tried to melt them with their hands.  We had a race to see who could melt it the fastest.  Then we compared how fast ice cubes melted with cold water vs hot water.  It was a fun little experiment with out a lot of mess!!

Pumpkin Playdoh Party Favors

Many schools are encouraging healthy treats for parties and some are even suggesting non-food items.  I decided that I was going to make Playdoh Jack-o-Lanterns for my son's preschool class.  They were very simple and used very basic ingredients so it didn't cost me an arm and a leg either.  

Supplies
  • 2 Cups All Purpose Flour
  • 4 TablespoonsVegetable Oil
  • 4 Tablespoons Cream of Tartar
  • 2 Tablespoons Salt
  • 2 Cups Warm Water
  • 1 6oz pakg Orange Jello
  • Small Cello Bags
  • Ribbon
  • Happy Halloween Tag
  • Black Sharpie
This is enough to do 10-12 small balls

In a medium sauce pot combine flour, salt, cream of tartar, and jello.  Mix together.  Then add water and vegetable oil and whisk until all the lumps are dissolved.  
Over medium-high heat stir continuously as mixture begins to thicken.  This will take a couple of minutes
Continue stirring and folding the dough as it becomes more solid.
Remove from pan and place on wax paper to cool.
After Playdoh cools place rounded balls into the cello bag.  Attach the tag and tie the top closed with a small piece of ribbon.  Last draw a Jack-o-lantern face on the bag with a black sharpie.

Fun with Fossils

My boys love to help cook and they love to get dirty so this was the perfect project for them to help me with.  Plus it was nice to have a few extra hands to help me!

Ingredients:
  • 1/2 Cup Sand
  • 1/2 Cup Used Coffee Grounds
  • 1/2 Cup Water
  • 1 Cup Flour
Combine all ingredients except water
Slowly add water until thick dough forms.
Now it's time to get our your DINOSAURS!
Preheat oven to 200 degrees.  With a spoon, scoop out about a golf ball sized amount on to an ungreased baking sheet.  I used the bottom of a glass to flatten them out.  The dough will be sticky.  
Use the plastic Dino feet to make imprints in the dough
Bake for about 25 minutes.  Using a metal spatula, flip them over and bake for another 5-10 minutes to dry out the bottom.

Jalepeno Popper Dip

Recently I was at a party and the hostess made this dip, for days my friends and I talked about how delicious it was.  I LOVE the spicy, cheesy, deliciousness of it! I made it for a party we recently had and everyone asked me for the recipe.
**When I made this one I accidentally forgot the top 1/4 cup of cheddar.  Ooops.  It was still delicious, but the top would have been a little prettier with a little more cheese.  Plus who doesn't love MORE cheese!


Ingredients:
  • 8 oz Cream Cheese (I used 1/3 less fat, but don't use fat free it won't melt)
  • 1/2 cup Mayonnaise
  • 1/2 cup + 1/4 cup Grated Parmesan Cheese
  • 1/4 cup Panko Bread Crumbs
  • 1/2 + 1/4 cup Shredded Cheddar Cheese
  • 1- 4 oz can of Sliced Jalepeno Peppers (drained)
  • 1 Tablespoon Diced Fresh Jalepeno or more for more spice (optional)

Preheat oven to 350.  In a medium mixing bowl, combine cream cheese, mayonnaise, 1/2 cup of Parmesan cheese, cheddar cheese, and jalepenos.  Mix with electric hand mixer.  Don't worry about the canned jalepenos being to big, they will come apart and mix in with everything.  Place dip mixture in 8x8 baking dish.  Sprinkle on Panko bread crumbs and remaining 1/4 cup of Parmesan cheese and 1/4 cup of Cheddar.  Bake for 20 minutes.

I actually made mine ahead of time and placed it in the refrigerator until I was ready to bake it.  Since mine was really cold and straight out of the fridge it took closer to 27 minutes.

Serve hot with bagel chips, tortilla chips, or crackers.

Blueberry Blitz Lemonade

For the birthday party I made a GIANT pitcher of lemonade.  It wasn't really a pitcher, it was more like one of those GIANT Gatorade things that you see them dump over the coach's head at a football game.  Anyways I had LOTS of lemonade.  I figured the adults at the party would appreciate a nice drinks as well.  So in a SEPARATE pitcher I made an ADULT version.  I actually had to refill the adult pitcher 4 times because it was SO good!

Ingredients:
  • 48 ounces of Lemonade
  • 8 ounces Blueberry Vodka ( I used Stolichnaya Blueberry)
  • 1/2 cup Fresh Blueberries
  • 1 Lemon Sliced
Mix lemonade and vodka in pitcher.  Add blueberries and lemon slices.  Serve over ice.  Garnish with additional lemon wedge and a couple of blueberries.  Then go sit by the pool and ENJOY!

Fossil Cookies

Planning birthday parties allows me to do two of the things I enjoy most 1. cooking and 2. be crafty.  And I get to do it both at the same time!!  YAY!  I still like to keep things simple and this is PERFECT for that!

Ingredients:
  • Refrigerated Sugar Cookie Dough
  • Plastic Dinosaurs, Plants, or Bugs
I used tubes of refrigerated sugar cookie dough.  I sliced it into about 1/4 inch slices and baked for 5-6 minutes at 350 degrees.  As soon as they came out of the oven I pressed dinosaur feet into them.  I let them cool and then put a couple into clear treat bags and added them to the goody bags.  I made plenty of them, so I also had a tray of them at the party.

Triple Threat Brownies

I LOVE having company over because it gives me a reason to make a dessert!  And I really LOVE having company over to EAT the dessert otherwise I will keep eating it until it is GONE!  We had some family stay with us for a long weekend, so I got to make a few desserts while they were here.  YAY!  This recipe combines several of my favorite things 1- Brownies, 2-Cheesecake, 3-and Peanut Butter.  YUM YUM and YUM!

Ingredients
  • 3 Cups Rice Crispies
  • 1 Cup Peanut Butter
  • 12 oz bag of  Semi Sweet Chocolate Chips
  • 12 oz can of Cream Cheese Icing
  • Brownie Mix (made according directions on box)
Make brownies according to box in a 13x9 inch baking dish.  Let them cool completely.  When cool, spread the cream cheese icing evenly over brownies. Place in freezer for about 20 minutes or long enough for the icing to become hard.  This will make it easier to spread the third layer on top.  
 In a sauce pan combine chocolate chips and peanut butter.  Over medium heat stir the peanut butter and chocolate chips as they melt.
 When the mixture is smooth and creamy and all chocolate chips are melted, remove from heat. Add in the rice crispies and gently stir to combine.
 Make sure you stir gently so you don't crush the rice crispies.
 At this point, my kids asked me if this is how you make Cocoa Crispies...they always make me laugh!
 Remove brownie pan from freezer and spread the rice crispy mixture evenly on top.  Refrigerate the triple layer brownies for about a half hour.  Cut with sharp knife and serve with a glass of milk!!!
