Slow Cooker Beef and Noodles


Sometimes I make the simplest of dishes, that I feel like I shouldn't even need to put recipes up for them... but then I remember that just like myself, most people make simple meals most nights of the week. And now that we are posting weekly menu plans, I need to make sure we have a couple staples in each week's menu plan.

Slow Cooker Beef and Noodles are one of these dishes. It is pure comfort food and is so super easy to make. It seriously only has 4 ingredients (ok it really has 8 if you include the salt, pepper, water and chives I added for the picture), and takes about 2 minutes of prep. And it is simple enough that even the pickiest of palettes will gobble it up.



Ingredients:
1.5 pounds stew meat
1 can French onion soup
1 can's worth of beef broth (use the onion soup can to measure)
Salt and Pepper to taste
Egg noodles

Place the meat, soup and broth in the slow cooker and cook on low for 6-8 hours. During the last hour, add in the egg noodles and more water to cover the egg noodles. Check it about every 20 minutes to check the consistency of the noodles to your desired taste, and add more water as needed. This part is hard to give specific amounts and times on depending on the type of noodles you use. The noodles that have more of a homemade taste and feel to them cook faster than the others.

Tonight I served with Krispy Kale Chips and Cheddar Bacon Mini Muffins. Yummy:)
