Oatmeal Raisinet Cookies

I have made oatmeal chocolate chip cookies and I have made oatmeal raisin cookies so I thought I would combine the two!  I love soft oatmeal cookies and these were perfect!  I got the recipe from the Quaker Oats package (I left out the salt) and just subbed Raisinets for the raisins.  Best.  Cookies.  EVER!  


Ingredients:
  • 3 Cups Quick Oats
  • 1/2 Cup (1 stick) plus 6 Tablespoons Butter
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract
  • 1 1/2 Cups Flour
  • 3/4 Cup Brown Sugar
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1 teaspoon Cinnamon
  • 1 Cup Raisinets
Makes About 4 dozen cookies

Preheat oven to 350.  In large bowl, beat butter and sugars on medium speed with an electric mixer until creamy.  Add eggs and vanilla, beat well.  In a separate bowl combine flour, baking soda, and cinnamon, mix well.  Pour flour mixture into sugar mixture and mix well.  Add oats and rasinets, mix well.  Place dough onto ungreased cookie sheets and bake for 8-10 minutes.  Cool on wire rack.

Banana Nutella Muffins



My kids come home from school EXTREMELY hungry, so I try to have a snack ready for them when they get home.  These muffins (or cupcakes as my youngest likes to call them) are perfect sweet treat for them

Ingredients:
  • 2 Large Bananas- Mashed
  • 1 1/2 Cups Flour
  • 1/2 teaspoon Salt
  • 1/2 Cup Applesauce
  • 1/4 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 1/2 teaspoon Baking Soda
  • 1/8 teaspoon Baking Powder
  • 1 1/2 teaspoons Vanilla
  • 1/2 teapoon Cinnamon
  • About 1/2 Cup Nutella
  • 2 Eggs
I made 12 Regular Muffins and 10 Mini Muffins

Preheat oven to 350.  In a large bowl combine flour, salt, baking soda, baking powder, and cinnamon.  In a separate bowl cream together mashed bananas, applesauce, sugar, brown sugar, vanilla, and eggs.  Add that to the flour mixture and beat until just combined.  Scoop batter into full size muffin tins until about 1/2 full.
  Then place a SMALL dollop of Nutella on top.  Place another scoop of muffin batter on top of Nutella.

 Bake for 11-12 minutes.

**for mini muffins I just filled them about 2/3 of the way full and placed a small dollop of Nutella on top of batter.  I baked them for 8 minutes.

Pepperoni and Cheese Monkey Bread

The original recipe for this was one of the VERY first things that I pinned and actually accomplished from Pinterest.  I am not sure where the original recipe came from, so I am sorry to the original pinner.  I make it totally from memory now so it was hard to actually measure for this one.  Oh wait...I didn't keep track of the actual amount of pepperoni or cheese that I used, so I guess I didn't as good of a job as I thought that I had.  Sorry!

Ingredients:
  • 1 (28 oz) Package of Frozen Pizza Dough (thawed)
  • About 3 Tablespoons of Butter
  • Minced Garlic
  • Pepperoni Slices (less than a package)
  • Mozzerella- cut into cubes
  • Pizza Sauce for dipping
Melt butter and stir in garlic.Break off a piece of the dough (a little smaller than a golf ball), flatten it out just a bit, and place a piece of pepperoni and mozzerella inside.  Fold the dough around it forming into a ball.  
Roll ball in garlic butter and place in ungreased bundt pan.  Repeating until all dough is used.
Bake at 350 for 30-35 minutes.  Turn pan over onto plate and serve with warm marinara sauce for dipping.

Henderson Hummus {Updated Version}


Here's another great version of Henderson Hummus. I love hummus so I enjoy experimenting and trying with different ingredients. This one just subs sundries tomatoes for the cucumbers and adds pine nuts. 
  • 1 can garbanzo beans
  • 1/4 cup tahini sauce
  • juice of 1 lemon
  • 1/4 cup good olive oil (I like to use some that my mother-in-law bought for me in Italy)
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup sun-dried tomatoes (I bought one with pine nuts in it, but you can just add a handful of them)
  • 1 tsp. garlic powder
  • dashes of salt and pepper
  • 1/2 tsp. pickle juice
Put all ingredients in food processor and mix until well blended. Serve with pita chips or tortilla chips. Tonight we're serving alongside our Athenian Chicken.

Strawberry Nutella Bruschetta

My youngest son, Nathan, is obsessed with what he calls "chocolate bread sandwiches."  It's really just Nutella on whole wheat bread.  If I would let him, he would probably eat it for lunch everyday!  I don't want to eat the same thing every day so I thought he would appreciate a little change  This is what I came up with.  It is a perfect after school snack or a new lunch time favorite!

Ingredients:
  • Whole Wheat Bread Slices
  • Strawberries
  • Kiwi
  • Nutella
You can make as many or as few as you would like just adjust the amount of ingredients used accordingly.  


 Preheat oven to 375.  Cut bread into desired shape.  I use a couple different sized shot glasses to get my desired small round shapes.
Place bread on baking sheet and put in oven for about 2 minutes or until lightly toasted
Dice fruit.  Spread Nutella onto toasted bread and sprinkle with fruit pieces.

Mini Basketball Cookies

 March Madness is right around the corner and the kids want in on the fun!  These are so simple to make.  First I drew on the Nilla Wafers with  a black Wilton Food Writers Edible Color Marker to look like the lines on a basketball.  I used mini Nilla Wafers and white icing with red and yellow food coloring to make it orange. You could easily change this up and use your favorite team's colors.

Pizza Rolls- all Grown Up

My husband is a hot lunch kind of guy and when he is home for lunch on the weekends the last thing I want to be doing on my Saturday or Sunday afternoon is cooking lunch (because I usually cook breakfast and dinner).  I often make these Pizza Rolls along with Ham and Cheese Calzones to keep in the freezer for those weekend lunches.  I can also take them straight from the freezer and put them in the kids' lunch boxes and they thaw in time for them to enjoy in place of a sandwich at school.  These Pizza Rolls are the perfect addition to Family Movie Night, Game Day, and Parties.
Ingredients:
  • Pepperoni
  • Mozzarella
  • Garlic Salt
  • You favorite Pizza Dough Recipe (I will post mine soon)
Flour your counter top and roll out dough to about 1/4 inch thick.  Then layer Pepperoni and Shredded Mozzarella.  Sprinkle with Garlic Salt.
Next tightly roll the dough into a log form.  I recommend making them no longer than 14 inches, because if you make them too big it will take too long for middle to cook and the outside will be too overdone.  Pinch the ends and seam closed with your fingertips.  Brush roll with butter to ensure a nice golden color while baking.  Bake at 375 for about 20 minutes.  I line my baking sheet with parchment paper just in case one of the seams opens up.  Baking time will vary based on the size and thickness of the dough.  Just keep an eye on it.
Serve right away with a side of marinara sauce or let them cook completely and you can put them in the freezer for a quick and easy meal later on or even a late night snack:)

Garlic Pretzels

                                   
A few years ago we were down at the lake for the weekend with some family.  Everyone had brought a few snacks to share.  One evening Aunt Wendy pulled out these pretzels and we were all instantly hooked!  All I have to say is- good thing we are all family because I am sure we all reeked of garlic the entire evening.  These pretzels go perfectly as a snack with a beer:)

Ingredients:
  • 1 1/2 teaspoons Garlic Powder
  • 1 stick of Butter
  • 3 Tablespoons Worcestershire Sauce
  • 1 Bag of Sour Dough Pretzels
Preheat oven to 250.  Gently crush the Sourdough Pretzels.  I leave them in the bag and use a rolling pin.  Place the pretzels in a single layer on a jelly roll pan.   Next, ,melt Butter then add in Worcestershire Sauce and Garlic Powder.  Pour mixture over pretzels and gently mix.  Bake for 15 minutes and toss with spatula. Bake for an additional 45 minutes tossing every 15 minutes, for a total of one hour.

I love to sneak some while they are warm, but you can store them in a sealed container for a long time.   I usually make two bags at a time because they are so addicting!

Connie's Caramel Corn

My Mother-in-law is a HUGE popcorn fan. My kids got her an air popcorn popper for Christmas so together they decided to make some caramel corn.
We normally just make popcorn in the microwave, so this was a huge treat for them!
Ingredients:

  • 2 sticks of butter
  • 2 cups of brown sugar (firmly packed)
  • 1/2 cup Karo Syrup
  • 1 tsp. salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon Vanilla
  • 1 1/2 cups unpopped popcorn

First, pop (in air-popper) 1.5 cups of popcorn. After popped, pour popcorn into shallow baking dishes.
Melt 1 cup of butter on medium heat in sauce pan. Stir in 2 cups of brown sugar, 1/2 cup of Karo Syrup and 1 tsp of salt. Bring to boil, stirring constantly.
Once it comes to a rolling boil, let boil for five minutes WITHOUT stirring. Then remove caramel from heat and add 1/2 teaspoon of baking soda and 1 teaspoon of Vanilla. Mix well. Gradually pour caramel over popcorn and gently mix.
Bake at 250 for one hour stirring every 15 minutes. Let popcorn cool completely before breaking it apart. Store popcorn in air tight container. This recipe made 3 gallon size bags full.
