Chicken Salad Lettuce Wraps

Last weekend, my husband wanted Picnic Perfect Chicken Salad Sandwiches, I on the other hand felt like I had had enough bread.  I decided to try something different, I made a lettuce wrap with the chicken salad.  There was really nothing too it (except a lot less calories)!  I will definitely be making these again!!  SOON!

Ingredients:
Follow recipe for Picnic Perfect Chicken Salad, but instead of putting it on a croissant, bread, or pita wrap it in a leaf of Romaine Lettuce.

Marvelous May Menu


Spring is officially here!  The weather is warm and we are starting to think about bathing suit season...Yikes!  I guess we should all pay a little more attention to what we are eating.  We spent the last few weeks experimenting with new recipes and taking some of the tried and tested and making them a little better for our waistlines.  We love to cook even more in the spring and summer because of all of the possibilities added with the availability of so much more seasonal produce!  We also love that we can fire up the grill a few nights a week which gets our husbands involved in some of the cooking too!

Skinny BBQ Chicken Pizza On the Grill

Typical pizza is loaded with calories many of which come from the buttery crust.  By using a whole wheat tortilla and a lot less cheese I can make this a delicious meal that is WAY healthier than any delivery pizza.  

Ingredients:
  • 4 Burrito Size Whole Wheat Tortilla
  • 1 Grilled Chicken Breast
  • About a 1/2 Cup Favorite BBQ Sauce (I used Best Darn BBQ Sauce Recipe)
  • Red Onion (I lightly saute the slices so they are not so crunchy)
  • Two Pieces Cooked and Crumbled Turkey Bacon
  • 1/2- 1 cup 2% Milk Cheddar Cheese
Spread an even layer of BBQ sauce onto each tortilla shell.  Sprinkle with chicken, bacon, onion, and cheese.  Place on foil lined grill for 6-8 minutes or until cheese is melted and tortilla is slightly crispy.  Cut into quarters.

I served this with Honey Grilled Pineapple.

Low Carb Italian Chopped Salad

I love Italian sub sandwiches, but I dont really love all the fat and carbs, but you can turn almost any sandwich into a delicious salad? Here's my take on an Italian chopped salad.

For the Dressing:
  • 1/4 cup olive oil
  • 1/4 cup chicken broth
  • 1/4 cup red wine vinegar
  • 1 tsp. minced garlic
  • 2 tsp. Dijon mustard
  • Lots of pepper
  • Salt
Put all ingredients in food processor and blend. Chill for 30 minutes.

For the salad:
  • Romaine or iceberg lettuce
  • Turkey pepperoni, fat free ham and hard salami
  • Tomatoes
  • Cucumbers
  • Red onions
  • 2 slices mozzarella cheese
Chop up lettuce into small bite size pieces. Chop desired amount of other ingredients and toss all of it lightly in the dressing. Serve immediately!

Philly Cheesesteak Stuffed Peppers


Ingredients:

  • 2 Green Peppers (cut in half and cored and seeded)
  • 1/4 Onion
  • About 8 Mushrooms Slice
  • 4-8 Provolone Cheese Slices (the layer in the bottom of the pepper is optional- I usually leave it out to make it a little less fat and calories)
  • Salt and Pepper to taste
  • 1-1.5 lb (depending on how stuffed you want them) Thinly Sliced Skirt Steak
  • 1 Tablespoon of Butter
Place clean peppers in a baking dish.  In a skillet melt butter add onion and cook until soft.  When onions are almost done add in the mushrooms.  Season with salt and pepper.  Meanwhile in a separate skillet cook meat thoroughly.  Season meat with salt and pepper.  You could also add a dash of crushed red pepper flakes if you would like to make it spicy.  
Preheat oven to 350.  Line each of the peppers with a slice of provolone, add a few onions and mushrooms then fill with meat.  Top with additional mushrooms and onions.  Top with another slice of provolone
 Bake 9-11 minutes. I served with Garlic Rosemary Potato Wedges (recipe coming soon).  Enjoy!
